The release in order, as far as this build can confirm it. Each stage opens the progression guide at that point rather than repeating it here.
Stage 1 · Early
Your early priority is the town route. Speaking to Farmer Hans is the step that opens Town 2, and the towns carry you to the ordinary Catacombs entrance.
Stage 2 · Alongside
These run beside the main route from early on. None of them is a gate, and none of them has to be finished before the towns.
Stage 3 · Mid
Two areas open around the towns: Old Woods from the Town 2 stage, and the normal Catacombs entrance from Town 3.
Stage 4 · Deep
The deep areas are far more dependent on specific quests and key items than the towns are. This is the one part of the route where the order is fixed.
Stage 5 · Late
The last stretch is where the routes converge: the research arc, the Art Gallery and the Shrine all meet at the same door.
